Beef tournedos could be purchased from your local butcher if they’re trying to sell the smaller cut at the end of their tenderloin after cutting of filet mignons.

Traditional Beef Tournedos Rossini Recipe

Cook time: 30 minutes

Servings: 2 servings

Ingredients:

  • 2 Filet Mignons or Beef Tournedos
  • 2 bread slices, cut into a filet-shaped circle
  • 4 tbsp butter
  • 1 handful of fresh spinach
  • 1.5 ounce package of demi glace concentrate (or a red wine madeira sauce)
  • 4 cups beef stock
  • 2 slices of foie gras (duck liver)
  • Salt and pepper to taste

Directions:

  1. In a small saucepan, mix together the demi glace with beef stock.
  2. Simmer the mixture for 5-6 minutes.
  3. While that’s reducing, melt butter or olive oil in a large skillet over medium heat and toast each side of the bread to create a toasted golden brown crouton.
  4. Pat the cuts of beef with paper towels to dry.
  5. Season tournedos or filets with salt and pepper.
  6. Sear your steaks in the pan or a cast-iron skillet over medium-high heat.
  7. Once the fillet steak is seared, drop the temperature to a low heat and add 2-4 tablespoons of butter to the pan and baste the steak with the melted butter until your steak reaches your desired internal temperature. You can also add a garlic clove for added flavor, but it will be delicious without it as well.
  8. Remove the steaks from the pan and allow them to rest.
  9. Meanwhile, add a handful of spinach into the same skillet on low heat, and mix it with the butter and brown bits from the steak. Cook until the spinach is wilted.
  10. Remove the spinach from the pan.
  11. Add the sliced foie gras to the skillet and sear the top and bottom on medium high heat.
  12. To plate, add the toasted bread to the bottom of the plate and top the bread with a spoonful of the wilted spinach.
  13. Then, top with the tournedos steak or filet and add a slice of the seared foie gras to the top of the stack.
  14. Finally, drizzle with the demi glace sauce. Sprinkle it with salt and pepper, to taste. Garnish with fresh herbs, if desired.
